Ingredients
6oz lambs liver
2 rashers streaky bacon
1 small onion
1 oz mushrooms
1/2 oz cooking fat
1 stalk celery
1 rounded dsp seasoned flour
2 tsp tomato puree
1 oz sultanas
175ml stock
salt and pepper
rice and chopped parsley to garnish
Method
Chop bacon. Peel and chop onion finely. Wash and slice mushrooms. Wash and chop celery finely. Wash and dry liver. Remove skin and cut into narrow strips. Toss in seasoned flour.
Melt fat in wide shallow pan. Add bacon and onions and fry gently for 2-3 mins. Add mushrooms and celery and cook gently for 2 mins. Add liver and fry until brown. Remove pan from heat and add any excess flour and gradually add stock stirring all the time.
Return to heat and bring to boil. Add tomato puree and sultanas. Simmer gently for 25 mins. Add more water or stock if required. Check seasoning.
