Courgette & Chorizo Gnocchi

Ingredients

1 tbsp Olive Oil
1 clove, Garlic
1 lb, Gnocchi
1 Basil Leaves
1 cubic inch, Cheese - Parmesan, hard
200 g, Courgettes (2)
60 gram, Chorizo 

Method

Heat 1tsp oil in a large frying pan and add the chorizo slices. Cook for 2-3 mins, turning once. Add the garlic and courgettes and cook, stirring, for 2-3 mins.


Meanwhile, cook the gnocchi in a large saucepan of boiling salted water for 1-2 mins, or until they rise to the top. Drain well and transfer to the pan containing the courgettes.

Gently mix the gnocchi and courgettes. Season, then drizzle with olive oil and serve topped with basil leaves and Parmesan.
