Apple Meringue

Ingredients

450 g cooking apples peeled and sliced
1-2 tablespoons water
1-2 tablespoons sugar
3 eggs separated
150 g caster sugar

Method

Pre-heat the oven to 180 degrees C

Place the peeled and slice apples in a saucepan

Add the water and sugar

Over a medium heat, gently cook the apples until soft

Remove from heat

Gently stir in the egg yolks

Set aside to cool

Whisk the egg whites until stiff

Add the sugar a little at a time whilst still whisking until smooth and stiff

Grease a baking dish

Place the apple mixture on the bottom

Spoon the meringue on top

Bake in the oven for about 30 minutes, until the meringue is brown.
